There are people in life who cross our paths and leave us changed forever. Nick Knutzen is one of those people for me. We met last August at the inaugural “Keep It Paleo!” seminar at CrossFit St. Paul. During introductions, Nick explained that he had some “Paleo Plans” in the works, but didn’t share the details until a later date…

As a part of the end-of-seminar survey, Nick shared an interest in talking more about his project. We corresponded through email and eventually over the phone and our friendship began. This sound like a love story, doesn’t it? Well, it is. We both love food!

You see, Nick was on a mission to bring Paleo food to the masses. He had already been working in some Minneapolis restaurants and with a meal delivery company. He had his feet well planted, but wanted to work with me to gain more experience. I agreed to share my stories and experiences with him and to help him however he needed. We continued to correspond through email about his project and he agreed to help me with my next seminar at CrossFit Progression in Rochester, MN.

We met at The Restaurant Depot in St. Paul and he helped me load up three huge carts full of goods for the seminar. He filmed the procurement process and then came to Rochester to film the entire event. You see, Nick is also a video producer, so our shared passions worked well together.

The goal was to capture footage of the seminar that we could use as promotional material for future seminars. Nick captured the footage, which we are editing now, so be sure to stay tuned to see the fruit of this labor…

After that event, Nick agreed to come to Moorhead, sleep on my couch and run the camera for a series of 30 videos over 3 days.

What did Nick want for his efforts?

Nothing.

Well, nothing besides friendship and the hope that a little of my cooking knowledge might rub off on him. Nick is just that kind of guy. Selfless and smiley are two s-words that describe him well.

We have similar names and similar missions and we work very well together. When Nick wasn’t behind the camera, he was washing dishes. When he wasn’t washing dishes, he was asking what he could do to help. He was always positive and always encouraging, just the kind of guy you’d want to hang out with. Especially over three long days in the kitchen.

Our next meeting was at a hotel in Minneapolis where we occupied the banquet room for a day(above). Again, Nick volunteered his time to work with me on analyzing the footage from the earlier shoot. He organized all of it and helped me transfer it to a couple of hard drives. We got to know each other a little better and when we said our good byes, he gave me a book, The New Evolution Dietby Art Devaney.

I was headed to California and he was headed to launch his Paleo Project. We didn’t know when our paths would meet again, and still do not, but we continue to correspond through email and I eagerly await our next adventure together.

Nick has an interesting story that has brought him to the point in life where he wants to learn his purpose and follow it with passion. I believe, as does he, that he has found it and it includes Paleo Food.

About a month ago, Nick sent me the first menu for his new Paleo Meal Delivery Service. He is in the testing phase as I type this, but I wanted to share some pictures of his work. Check these out…

Definitely redefining the term “prepackaged meals.”

While some people are so poor that all they have is money, Nick is rich in that he values relationship and knowledge. Money is not the goal for him. He is excited about cooking amazing food and making people happy with it.

I am currently reading the book Making A Life Making A Livingby Mark Albion and its theme is very inline with Nick’s mentality. While society values money, status, and power, humans aren’t wired for that. Here is a quote by Martin Luther King, Jr. from the book:

“We are prone to judge success by the index of our salaries or the size of our automobiles rather than by the quality of our service and relationship to mankind.”

Powerful, eh?

I could talk endlessly about this book or about the amazing guy that Nick is, but I won’t. I’ll wrap this up…

Nick, if you are reading this, I want you to know that you are an amazing human being. My life is better because I know you. You are on purpose and the quality of your work shines in the above pictures. Keep aiming for the stars and take Charlie Trotter’s advice, “Strive for perfection because, even when you fall short, you will achieve a high level of excellence.”

For the rest of you reading this, especially those in Minneapolis/St. Paul, get ahold of Nick and support his venture. Tell your friends, family, and co-workers. He is just getting this off the ground, but I believe in him and will vouch for the quality of his service. I’ll keep you all posted as his project progresses.

There is nothing more satisfying than having an impact on someone in the way that Nick describes my impact on his life. However, I feel as though I have done nothing and he has done so much…

I’ll leave you with a portion of the note he wrote inside the book he gave me:

Life is a journey, guys.

As I’ve said before, “The difference between who you today and the who you’ll be in ten years is the books you read and the people you meet.”
