For today’s recipe we have a wonderful guest, Rick Hevener, who took on the request of preparing this dish at home and reporting back with his experience. Rick and Nick have been friends ever since Nick spent time with Rick and his family over a whirlwind weekend of meal prepping a few years back. Nick wrote about his experience in an article titled, Family Affair. Here is what Rick had to say about preparing this recipe:

I got up on Saturday morning, grabbed my bus tub and headed out to the store to “gather these ingredients”. One of the things that is so nice about the recipes and videos on the site is they are so easy to follow.

I hadn’t tried the Sesame Chicken with Broccoli before, so I was excited to give it a go. Wow was it good! Such great flavors put together in crave-able combinations. I will put my hand up too, that this is the “world’s greatest five block meal”. The best part was that everyone in my family loved it also!
My family and I really have learned so much from Nick’s videos, articles, and stories. He gives so many practical suggestions that you can apply. For example, in this article here, Nick explains the idea of constantly gardening your eating habits. “There’s always room for improvement.., and you don’t have to take on the world in a day”.
“The Bro!” will love this, and I think “The Jo!” might like it even though he is a vegetarian! I’d encourage everyone to give this a try. It is super tasty, easy, fun to make, and a healthy way to add some flavorful variety to your weekly meal routine.

Sesame Chicken with Broccoli

Ingredients:

  • 12 ounces boneless, skinless chicken breast, diced
  • 3 tablespoons honey
  • 3 tablespoons tomato paste
  • 2 tablespoons apple cider vinegar
  • 1 ounce tamari (gluten free soy sauce)
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 2 cups onions, diced
  • 8 cups broccoli, steamed
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons sesame seeds, toasted
  • Water, as needed
  • Scallions, Asian Bias Cut, to garnish
  • Kosher salt, to taste
  • Black pepper, to taste

Preparation Instructions for the sauce:

  1. Heat a sauté pan over medium-high heat.
  2. Add the honey to the pan and caramelize by whisking constantly.
  3. Once honey reaches a light caramel color, turn the heat down and add ginger and garlic and cook for 20 seconds, whisking constantly.
  4. Add the vinegar, being mindful of the steam that will be produced, tomato paste and Tamari and continue whisking.
  5. Add sesame oil, whisk in and then adjust consistency of the sauce with water. You want what is called nape, or the thickness that will coat the back of a spoon. Add sesame seeds, whisk in and set sauce aside.

Preparation Instructions for the chicken:

  1. Heat a sauté pan over medium-high heat and add sesame oil
  2. Season chicken with kosher salt and pepper and when the oil is hot, place the chicken in the pan, seasoned side down. Then, season the top side with salt and pepper.
  3. Cook for one minute, stirring occasionally. Then add onions, stir to incorporate and season with salt.
  4. Cook for 3 minutes longer, then remove pan from burner and bring sauce pan back to center stage.
  5. Add the chicken to the sauce and cook until chicken is done, approximately 2-3 more minutes. Cut the heat.
  6. Heat broccoli on stove top or in the microwave. Once it is steamy and fresh, use it to create a circular bed on your plate.
  7. Top broccoli with the chicken and sauce mixture and garnish with toasted sesame seeds and scallions.
  8. Enjoy!
