It was Sunday and I knew Monday was going to be a doozie, so I picked up some Alaskan King Crab legs, a kilo of Asparagus, and a four pack of Kerrygold Grass Fed Butter. Have you ever used food as motivation? This is just what I did yesterday. I would take whatever was thrown my way as long as I could indulge in my favorite meal that evening.

I started with two crab legs. When picking these out, be sure to do just that. Get the ones that are deiced as they will weigh less. Also, be selective by looking for legs with good knuckle meat and a large merus section, which is the upper portion closest to the knuckle.

I chose these two:

The two of them weighed .98 pounds, which cost $19.97. By the time I deshelled them (and maybe snuck a morsel or two), they weighed 10.8 ounces. In the professional kitchen, this is called taking a food item from AP to EP, which means “As Purchased” to “Edible Portion”. So, a little large for a five block Zone meal, but I was alright with that.

I set the crab aside and fired up 1/4″ of water in a lidded saute pan. Once it began to simmer, I chopped the woody ends off of the Asparagus, peeled a few of them and then placed them in the pan and covered with a lid. After about three minutes, it looked like this:

Two minutes longer and they were done. I removed them from the pan, dumped the water, added a smaller amount of fresh water and steamed my crab for two minutes in similar fashion. I also dropped two tablespoons of GF butter in a saute pan and melted it over low heat with a few shavings of fresh garlic.

When the crab was done and butter melted, I plated it all up and got to work.

I wasn’t picky about milk solids in my butter, I was just hungry.

There you have it, post two of my five post goal this week. Did I mention my wife and I celebrate our 10th Anniversary this Friday? Well, I mentioned it yesterday, but in case you forgot, I’ll share another pic from our honeymoon below. We leave for Hearst Castle, Big Sur, Carmel and Monterey tomorrow and we are excited!

Hopefully I’ll find some King Crab on the trip!!! 😉
