Kalbi-Style Pineapple-Ginger Short Ribs

This is my favorite video in recent memory. There are two reasons for that:

  1. It features one of my favorite foods.
  2. It comes across as a really good time, which is what cooking should be.

These ribs are the simplest, yet tasty protein you can lay your taste buds on. Pineapple is a great tenderizer and it works perfectly as a marinade because it offers sweetness, but without sugar, which is a traditional ingredient in “Kalbi-Style” beef.

Well. This is going to be two posts before 7:30AM, so I’ll keep it short.

I mentioned in the Asparagus Almondine article that it is Valentine’s Day, a day that is all about love, right?

When we are focused on nutrition and exercise, we often set goals, right?

How do we combine love with our goals? In this day and age, it is easy to get caught up in busy-ness. Especially when we have computers, smart phones, iPads, Social Media, etc… It often becomes difficult for our loved ones to know that we love them. If you are constantly staring at your phone or computer when your child wants to play Ninja Turtles or build a tower with Marble Run, then they feel a bit neglected, which isn’t in-line with love.

So, how about if you set a goal to “Structure your life in such a way that your loved ones receive the best of your energy and attention, rather than the leftovers.”

I don’t know if you’re following me or not, but it was just a thought that I wanted to share.

Kalbi Style Pineapple-Ginger Short Ribs

Ingredient List:

  • 3 cups pineapple juice
  • 1/4 cup ginger, minced or shredded in the food processor
  • 1/4 Cup Tamari or coconut aminos
  • 1/4 cup garlic, minced
  • 2 lbs short ribs
  • 1 handful fresh cilantro, chopped
  • Coconut spray, as needed

Preparation Instructions:

  1. Combine pineapple juice, ginger, Tamari, and garlic, and stir to create the marinade.
  2. Lay short ribs in marinade and cover with cilantro.
  3. Marinate for 12-14 hours (24 hours is a good goal).
  4. Heat grill pan over high heat and season with coconut spray.
  5. Remove ribs from marinade and place on hot grill so that marks run perpendicular to the long part of the ribs. Use a hotel pan to press ribs into grill pan and ensure solid marks.
  6. Cook for 3-5 minutes or until good marks are achieved, then turn over and grill/press on the second side for 2-3 minutes.
  7. Serve short ribs over Asparagus and Mushroom Almondine and enjoy!

Zone Breakdown:

Proteins: (15)

2 pounds of short ribs after cooking down equals 22oz.  we know that 1.5oz equals one block, so therefore we have 15 blocks of protein form the short ribs.

Carbohydrates: (13.5 in marinade, not counted toward daily count)

We are using 3 cups of pineapple juice.  ¼ of a cup equals one block so therefore we have 12 carb blocks form the juice.  We are going to get 1 block from the Garlic.  10 cloves equal one block, and we get about 12 cloves in a ¼ cup, so we count it as 1.  Finally we get about ½ block form the garlic.  A quarter of a cup equals 24g, and 56g equal one block, so its about half a block added giving us a total of 13.5 carb blocks.  However, these blocks are used just for the marinade so we won’t count them in towards our total daily count.

There are no added fats in this recipe.

Balancing Act:

This recipe breaks down to being basically a 15- block protein recipe.  Enjoy the taste of these short ribs, and add some tasty carbs and fats to balance this meal out!
