“How To” Chiles and Limes

Okay. Here’s the deal. If we’re going to cut sugar from our diet, then we have to find flavor elsewhere. Two amazing ways to do this are with heat and acidity.

We want to, “replace the sweet with the heat.”

We can look to chipotle for some smoky heat or the Asian condiments of Sambal and Sriracha. However, for general heat, we look to black pepper and red chile. The red chiles I am talking about are the ones you find in the shaker at the pizza parlor. You follow? Grind those babies up and put them in a ramekin next to your salt and pepper shaker.

For acidity, look to lemons and limes. I think of lemons for all things European (Italian, Spanish, French, etc…) and limes for all things South American and Asian. If you’re cooking Aussie food, then use lime-ons. 😉

Anyhow, get these dialed in with your salt and pepper and oil. Keep your kitchen clean and sanitized and let’s get ready to cook.
