This was the very first video I shot for the Paleo Nick project. I hadn’t yet warmed up to the camera and I stumble through with ums and ahs, but I think the information is useful.

As with cooking, stocking your kitchen is a continual evolution and it is interesting to see how I have changed since shooting this…

  • I no longer have a microwave in my home. We moved into a smaller house and there simply wasn’t room for one, so we’ve used a toaster oven and haven’t missed the microwave at all.
  • I am transitioning from non-stick pans to cast iron skillets. While cast iron is heaver and a bit cumbersome, it’s penetrating heat is next to none. And, when well seasoned, it is as effective as non-stick.
  • While I still use poly cutting boards at my seminars and for fabricating raw meats, I have transitioned to Boos Butcher’s blocks. I’m a wood guy and this switch just made sense to me…
