Chorizo Sunrise

Ingredients List:

  • 4oz chorizo
  • 3 eggs
  • 1 sweet potato, precooked, Asian bias cut (ABC)
  • Water, as needed
  • Kosher salt, to taste

Ingredients for guac:

  • 1 avocado, peeled and diced
  • ½ lime, juiced
  • ¼ red onion, small dice
  • ¼ jalapeno, small dice (seeds in or out depending on your liking)
  • ½ Roma tomato, fleshed out, small dice
  • 3 sprigs cilantro, rough chop
  • Kosher salt, to taste

Preparation Instructions:

      1. Preheat a large saute pan over medium-high heat. Add olive oil. Place ABC sweet potatoes into the hot oil, listening for the sizzle as you set them in the pan. Add a pinch of salt and pepper. Cook for a couple minutes on each side.
      2. Mix up a quick guac in a medium sized mixing bowl, using all the guac ingredients listed above. Adjusted to your liking with more salt and lime, if needed.
      3. On a serving plate, lay out sweet potatoes in a sun shape
      4. Place chorizo into the same saute pan over medium-high heat and break it up with a spoon/spatula. Cook chorizo for approximately 3-4 minutes and crack the eggs into the pan. Scramble them into the chorizo and cook through. Cut the heat.
      5. Make a pile of the chorizo/egg mixture in the center of your serving plate (already lined with the sweet potatoes). Drizzle a little Salsa Chipotle over the egg mixture, add a good heap of guac and garnish with a cilantro sprig. Enjoy!
