Any week that starts AND ends with Shabir is a good week in my book. Today, Shabu and I throw down in the Paleo Garage and the result is an amazing meal. There’s something about the combination of smoky chipotle, sweet yam, and meaty meat (in this case bison) that works for me. Pair that with some avocado and a little mayo and you’re speaking my language.

Shabir brings a certain charm to the camera and it shines through in the video. The way I see it is just a couple of hungry friends throwing together a ten-minute-meal. I encourage you to gather with your friends this weekend and do the same…

I’m reading Rich Froning’s book First – What it takes to win. In it, he proritizes his life with three F’s: Faith, Family and Fitness. It reminded me of a post I wrote called The Four P’s – Phamily, Phriends, Phood and Phun. I like Rich’s book because it is super easy to read and it proves how down to earth the guy is.

I was thinking on these F’s and P’s this morning as I was walking up the hill to The Bro’s bus stop. He started riding the bus last week and loves it! Each morning, Jessie and I have the opportunity to go on a 25 minute outing with “The Jo” and “The Bro”. I was thinking about how we will only have so many “walks up the hill” and what if I were to measure my success by how many of them I participated in…

Sure, it’s easy to consider myself “too busy” to take some time out of my morning and enter the world of a 3 and 5 year old for 25 minutes. Today, we raced, talked about where the electricity in the power lines comes from and played a game of sticks. It’s simple stuff, but aren’t we supposed to keep it simple?

I want to encourage you today, as I challenge myself, to take a step back and be present. In a world of cell phones, tablets, lap tops, TVs, etc… we are seldom present. Leave your phone at home as much as possible this weekend and when you are tempted to eat processed crap, listen to the little Paleo Nick on your shoulder whispering in your ear…

Chipotle Bison Stuffed Yams

Ingredient List:

  • 1 pound ground bison (I used The Honest BisonĀ brand)
  • 3 smallish yams or sweet potatoes, precooked and sliced in half the long way
  • 1 yellow onion (medium sized), diced
  • 8 cloves garlic, minced
  • 2 poblano peppers, roasted, seeded, skinned and diced
  • 2 chipotle peppers with 1 tablespoon adobo sauce
  • 1 avocado, diced
  • Drizzle of Massie Mayo
  • Cilantro sprigs, to garnish
  • Olive oil, as needed
  • Kosher salt and black pepper, to taste

Preparation Instructions:

  1. Heat a 10″ saute pan until hot, then add some olive oil. Season the flesh side of the yams with salt and pepper and place, seasoned side down in the olive oil.
  2. Heat a 14″ saute pan until hot, then add some olive oil. Season the top side of the buffalo with salt and pepper and place, seasoned side down in the olive oil. Season the top side of the buffalo and break into large chunks, leaving the initial seasoned side in contact with hot olive oil.
  3. Add the garlic to the buffalo pan and stir to distribute evenly into pooled olive oil, then add the onions.
  4. Turn the heat on the yams down and place an inverted saute pan or lid on the top of the pan so that it will trap the moist heat and warm the yams from the top side as well.
  5. Break up buffalo and stir in onions and garlic. Then, add poblanos, chipotles and adobo sauce. Use your spoon to break up the chipotles and distribute evenly.
  6. Cook until bison is done, approximately 8 minutes.
  7. Cut the heat on both pans, transfer the yams to a plate, top with bison mixture, top with avocado, a drizzle of Massie Mayo, and some fresh cilantro sprigs.
  8. This is a great make-ahead meal. If you are going to prep for the week, portion and freeze, then leave the avocado and mayo out until after you reheat the food. Then, travel with a squeeze bottle of mayo and a few avocadoes in your quiver.

Zone Breakdown:

Proteins: (8)

We have 1 pound of ground bison. Let’s say that cooks down to 12 ounces. At 1.5 ounces per block, we have 8 protein blocks.

Carbohydrates: (8.5)

We have 3 smallish sweet potatoes. I am going to assign 2 blocks to each one, so 6 blocks of carbs.

We have approximately 1.5 cups of onions, so 1.5 carb blocks.

We have 2 poblanos, some garlic and some chipotles. I will assign 1 carb block for all of these.

Fats: (31/15.5)

We’ve got 1 whole avocado, which is about 2/3 cup. There is one fat block in 1/2 tablespoon of avocado. There are 10 tablespoons in 2/3 cup, so 20 fat blocks.

We’ll give 2 fat blocks for the Massie Mayo drizzle.

We’ll give 9 fat blocks for the olive oil as it is 1/3 tsp per fat block.

Balancing Act:

If you are using 3 grams per fat block, then you are at a 1P, 1C, 2F ratio, which may be beneficial if you’re very active. If you are using 1.5 grams per fat block, then you need to cut the fat. You could leave the mayo off and use 1/4 avocado per portion instead of 1/2 avocado. Either way you do it, this is a super tasty, healthy meal that could be the epitome of an effort to fuel fitness.
